Peach, Please! Easy Skillet Cobbler
Juicy peaches bubble beneath a fluffy golden topping in this easy cobbler. It tastes like summer made a very good decision, and the skillet does most of the work.

- 4 cups sliced fresh peaches (about 600 g)
- 2 tablespoons pure maple syrup
- 1 tablespoon fresh lemon juice
- 1 tablespoon cornstarch
- 1/2 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 2 tablespoons granulated sugar
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon fine salt
- 1/2 cup unsweetened oat milk
- 3 tablespoons vegan butter, melted
Do this
- Heat the oven to 190°C (375°F). Lightly grease a 10-inch oven-safe skillet or an 8-inch baking dish.
- Add the peaches, maple syrup, lemon juice, cornstarch, cinnamon and vanilla to the skillet. Stir gently until the fruit is evenly coated, then spread it into a level layer.
- In a medium bowl, whisk together the flour, sugar, baking powder and salt.
- Pour in the oat milk and melted vegan butter. Stir just until a soft, thick batter forms. Do not overmix.
- Drop spoonfuls of the batter over the peaches, leaving a few small gaps for the fruit to bubble through.
- Bake for 28 to 32 minutes, until the topping is golden and the peach filling bubbles around the edges. Let the cobbler rest for 10 minutes before spooning into bowls.
Easy swaps
- Frozen peaches can replace fresh peaches. Thaw and drain them first so the filling does not become watery.
- Gluten-free: use a certified gluten-free 1-to-1 flour blend. The standard recipe contains wheat and gluten.
- Oat milk can be replaced with unsweetened soy, almond or pea milk. Allergen note: soy milk contains soy, almond milk contains tree nuts, and oat products may have wheat cross-contact unless certified gluten-free.
