Pudding It Together: Orange-Cardamom Semolina Cups

Creamy semolina pudding gets a bright lift from fresh orange and cardamom, then a little pistachio crunch on top. It is a simple stovetop dessert that feels sunny, cozy and just fancy enough for company.

Grab this

  • 3 cups unsweetened soy milk
  • 1/2 cup fine semolina
  • 1/4 cup pure maple syrup
  • 1/4 cup fresh orange juice
  • 1 tablespoon finely grated orange zest, plus extra for serving
  • 1/2 teaspoon ground cardamom
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon fine salt
  • 1/4 cup shelled pistachios, roughly chopped

Do this

  1. Pour the soy milk into a medium saucepan and warm it over medium heat until steaming but not boiling.
  2. Whisk in the semolina in a slow, steady stream so it does not form lumps.
  3. Reduce the heat to medium-low and cook for 6 to 8 minutes, whisking often, until the pudding is thick and creamy.
  4. Whisk in the maple syrup, orange juice, orange zest, cardamom, vanilla and salt. Cook for 1 minute more, then remove the pan from the heat.
  5. Divide the pudding among four small cups or bowls. Let it stand for 10 minutes for a warm dessert, or chill it until cold.
  6. Top each serving with chopped pistachios and a little extra orange zest just before serving.

Easy swaps

  • Use unsweetened oat milk in place of soy milk. Soy milk provides more protein, while oat milk makes the pudding slightly softer.
  • Replace semolina with cream of rice for a gluten-free version, following the package cooking time. Semolina contains wheat and is not gluten-free.
  • For a nut-free topping, replace pistachios with toasted pumpkin or sunflower seeds. Pistachios are tree nuts.
  • Use agave syrup instead of maple syrup if preferred.
