Mango with the Flow: Creamy Coconut Freezer Pops

Eight frosty golden mango and coconut freezer pops with mango cubes and lime wedges on a pale ceramic plate.

Ripe mango, coconut milk and lime blend into sunny freezer pops with barely any effort. Allow about four hours for freezing, then let dessert chill you out.

Grab this

  • 3 cups ripe mango chunks, fresh or frozen
  • 1 cup canned light coconut milk, well stirred
  • 2 tablespoons fresh lime juice
  • 1 tablespoon pure maple syrup
  • 1/2 teaspoon vanilla extract
  • 1 small pinch fine salt

Do this

  1. Add the mango, coconut milk, lime juice, maple syrup, vanilla and salt to a blender.
  2. Blend until completely smooth, stopping to scrape down the sides if needed. Taste and add another small squeeze of lime if the mango is very sweet.
  3. Pour the mixture evenly into eight ice-pop moulds, leaving a little space at the top for expansion.
  4. Insert the sticks and freeze for at least 4 hours, or until solid.
  5. To release a pop, run the outside of its mould under lukewarm water for 10 to 15 seconds, then pull gently.

Easy swaps

  • No mango? Use an equal amount of ripe peaches or pineapple. The flavour and sweetness will change slightly.
  • For a coconut-free version, replace the coconut milk with unsweetened vanilla soy yogurt. Allergen note: soy yogurt contains soy.
  • Agave syrup can replace the maple syrup. If the fruit is very ripe, the added sweetener may be omitted.
  • No ice-pop moulds? Freeze the mixture in small paper cups and add wooden sticks after about 45 minutes, when the mixture is slushy enough to hold them upright.
  • The standard recipe contains coconut. Coconut is not a Canadian priority allergen, but individual coconut allergies can occur. Check every packaged ingredient for allergen and cross-contact statements when allergies are a concern.
  • The base recipe is gluten-free, peanut-free and soy-free when all packaged ingredients are certified accordingly.
