Snap to It: Sesame-Ginger Green Beans

Tender-crisp green beans pick up a glossy sesame-ginger glaze, toasted seeds and fresh scallions in one skillet. This lively side is ready in 20 minutes and brings plenty of crunch to the table.
Grab this
- 680 g (1 1/2 lb) fresh green beans, trimmed
- 60 mL (1/4 cup) water
- 1 tbsp neutral cooking oil
- 1 tbsp low-sodium tamari
- 1 tbsp unseasoned rice vinegar
- 2 tsp pure maple syrup
- 2 tsp toasted sesame oil
- 1 tbsp finely grated fresh ginger
- 1 garlic clove, minced
- 2 green onions, thinly sliced
- 1 tbsp toasted sesame seeds
- 1/4 tsp red pepper flakes (optional)
Do this
- Whisk the tamari, rice vinegar, maple syrup, sesame oil, ginger and garlic together in a small bowl.
- Put the green beans and water in a large skillet over medium-high heat. Cover and steam for 4 minutes, until the beans turn bright green and are nearly tender.
- Remove the lid and carefully drain any water left in the skillet. Add the neutral oil and cook uncovered for 3 to 4 minutes, stirring occasionally, until the beans develop a few browned spots.
- Pour in the sesame-ginger mixture. Toss for 1 to 2 minutes, until the glaze lightly coats the beans and smells fragrant.
- Remove from the heat. Fold in half the green onions and sesame seeds, plus the red pepper flakes if using. Transfer to a serving bowl and finish with the remaining onions and seeds.
Easy swaps
- No fresh green beans? Use thawed frozen whole green beans, skip the steaming step and sauté them directly until hot and lightly browned.
- Gluten-free: choose tamari specifically labelled gluten-free.
- Soy-free: replace the tamari with coconut aminos; because it is sweeter, reduce the maple syrup to 1 tsp and season to taste.
- Sesame allergen: omit both the sesame oil and sesame seeds. Use 2 extra tsp neutral oil and finish with toasted sunflower seeds instead.
- For a milder dish, leave out the red pepper flakes.
