Cabbage a Ride: Warm Apple-Caraway Skillet

Tender ruby cabbage, golden apple and sweet onion tumble together with caraway and a bright cider-maple glaze for an easy side that brings serious colour to the table.
Grab this
- 1 tablespoon olive oil
- 1 small yellow onion, thinly sliced
- 1 crisp apple, cored and thinly sliced
- 1/2 large red cabbage (about 700 g), cored and thinly sliced
- 1/2 teaspoon caraway seeds
- 1/2 teaspoon fine salt
- 1/4 teaspoon ground black pepper
- 2 tablespoons apple cider vinegar
- 1 tablespoon pure maple syrup
- 1/4 cup water
- 2 tablespoons chopped fresh parsley
Do this
- Heat the olive oil in a large deep skillet over medium heat.
- Add the onion and apple. Cook for 5 minutes, stirring occasionally, until the onion softens and the apple begins to colour at the edges.
- Add the cabbage, caraway seeds, salt and black pepper. Toss well and cook for 3 minutes, stirring, until the cabbage starts to relax.
- Stir the vinegar, maple syrup and water together in a small cup. Pour the mixture over the cabbage, cover the skillet and cook for 8 minutes.
- Uncover and cook for 5 to 7 minutes more, stirring occasionally, until the cabbage is tender with a little bite and the liquid has reduced to a light glaze.
- Fold in the parsley, taste and adjust the salt or vinegar if needed. Serve warm.
Easy swaps
- Green cabbage can replace red cabbage; the flavour stays mellow, but the finished colour will be less vivid.
- Use a firm pear instead of the apple for a softer, slightly floral sweetness.
- If caraway is not your favourite, use 1/4 teaspoon crushed fennel seeds or simply leave it out.
- Agave syrup can replace the maple syrup in the same amount.
- Allergen note: the recipe is naturally free of gluten, soy, nuts and sesame as written; check packaged ingredients for cross-contact if that matters for your kitchen.
