Pop Goes the Rosemary: Smoky Stovetop Popcorn

Freshly popped corn gets a cosy shake-up with smoky paprika, rosemary and garlic. It is crisp, savoury and ready before movie night can find the remote.

Grab this

  • 2 tablespoons olive oil, divided
  • 1/2 cup popcorn kernels
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried rosemary, finely crushed
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon fine salt
  • Freshly ground black pepper, to taste

Do this

  1. Mix the smoked paprika, rosemary, garlic powder, salt and black pepper in a small bowl.
  2. Add 1 1/2 tablespoons olive oil and three popcorn kernels to a large heavy pot. Cover and heat over medium-high until the test kernels pop.
  3. Pour in the remaining kernels, cover the pot and gently shake it back and forth over the burner. Keep shaking every few seconds as the popping speeds up.
  4. When there are about 2 seconds between pops, remove the pot from the heat and carefully lift the lid away from your face.
  5. Drizzle the popcorn with the remaining 1/2 tablespoon olive oil, sprinkle over the seasoning mixture and toss well. Taste and adjust the salt before serving.

Easy swaps

  • Use avocado or canola oil instead of olive oil. Choose an oil suitable for medium-high heat.
  • For a garlic-free version, omit the garlic powder and add an extra pinch of rosemary.
  • Sweet paprika can replace smoked paprika for a milder flavour.
  • The basic ingredients are free from Canada's priority allergens, but spice blends and packaged kernels may be processed near allergens. Check every label when allergies are a concern.
  • For a lower-sodium version, reduce the salt to 1/4 teaspoon and add extra paprika or black pepper.
  • Do not use butter-flavoured popcorn seasoning unless its label confirms that it is vegan and suitable for your allergen needs.
