Mango Unchained: Lime Chia Pudding Cups

Vegan mango lime chia pudding cups layered with mango purée and topped with diced mango and toasted coconut

Creamy lime-speckled chia pudding, sunny mango purée and juicy fruit stack up into a make-ahead snack that practically serves itself.

Grab this

  • 400 ml light coconut milk, well shaken
  • 120 ml unsweetened soy milk
  • 60 g chia seeds
  • 2 tbsp pure maple syrup
  • 1 tsp finely grated lime zest
  • 2 tbsp fresh lime juice, divided
  • 1/2 tsp pure vanilla extract
  • 1/8 tsp fine sea salt
  • 300 g ripe mango, diced and divided
  • 2 tbsp unsweetened toasted coconut flakes

Do this

  1. Whisk the coconut milk, soy milk, chia seeds, maple syrup, lime zest, 1 tbsp lime juice, vanilla and salt in a medium bowl until evenly combined.
  2. Let the mixture stand for 10 minutes, then whisk again to break up any chia clumps. Cover and refrigerate for at least 3 hours or overnight, until spoonably thick.
  3. Blend 150 g of the mango with the remaining 1 tbsp lime juice until smooth. Refrigerate the mango purée until the pudding is ready.
  4. Give the chilled pudding a final stir. Divide half among four small glasses or jars, spoon in the mango purée, then top with the remaining pudding.
  5. Finish each cup with the remaining diced mango and toasted coconut flakes. Serve cold, or cover and refrigerate for up to 2 days.

Easy swaps

  • Soy-free option: replace the soy milk with unsweetened oat milk. Allergen note: use certified gluten-free oat milk if gluten is a concern.
  • Coconut-free option: replace the coconut milk and coconut flakes with 400 ml oat milk and 2 tbsp pumpkin seeds; add 1 extra tbsp chia seeds to help the lighter mixture set. Allergen note: check oat and seed packaging for facility cross-contact warnings.
  • Fresh or thawed frozen mango both work; drain frozen mango before measuring so the layers stay thick.
