Freeze the Day: Banana-Cherry Yogurt Bark

Creamy vegan yogurt freezes into snap-able shards with banana, cherries, dark chocolate and pumpkin seeds—the easiest way to turn snack time into a tiny celebration.

Grab this

  • 2 cups (480 g) unsweetened plain soy yogurt
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 medium banana, thinly sliced
  • 1/2 cup (75 g) pitted fresh or frozen cherries, halved and patted dry
  • 2 tablespoons vegan dark chocolate chips
  • 2 tablespoons raw pumpkin seeds

Do this

  1. Line a small rimmed baking sheet or freezer-safe tray with parchment paper.
  2. Whisk the soy yogurt, maple syrup and vanilla in a bowl until smooth.
  3. Spread the yogurt mixture on the prepared tray in an even rectangle about 1/2 inch (1 cm) thick.
  4. Scatter the banana, cherries, chocolate chips and pumpkin seeds evenly over the yogurt, then press the toppings in gently.
  5. Freeze until completely firm, at least 3 hours.
  6. Break or cut the bark into pieces and serve immediately. Store leftovers in an airtight freezer container for up to 2 weeks.

Easy swaps

  • For a soy-free version, use unsweetened oat or coconut yogurt that freezes firmly. Allergen note: the original recipe contains soy; coconut yogurt changes the fat and saturated-fat estimate.
  • Swap the cherries for diced peaches or blueberries, patting juicy fruit dry before adding it.
  • For a seed-free version, omit the pumpkin seeds. Allergen note: people with seed allergies should avoid pumpkin seeds even though they are not tree nuts.
  • Use cacao nibs in place of chocolate chips. Allergen note: check chocolate labels for milk, soy, peanuts and tree-nut cross-contact, and choose a clearly vegan product.
