Avo Good Crunch: Crispy Baked Avocado Fries

Crispy baked vegan avocado fries with smoky lime dipping sauce, cilantro and fresh lime

Creamy avocado wedges get a golden, smoky panko jacket and a bright lime dip for an easy oven-baked snack worth sharing.

Grab this

  • 3 firm-ripe avocados
  • 1/2 cup all-purpose flour
  • 1 tbsp cornstarch
  • 3/4 cup unsweetened plant milk
  • 1 1/4 cups panko breadcrumbs
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp fine salt
  • 1/4 tsp black pepper
  • Cooking spray or 2 tsp neutral oil
  • 1/2 cup vegan mayonnaise
  • 1 tbsp fresh lime juice
  • 1 tsp finely grated lime zest
  • 1 tbsp chopped fresh cilantro, plus more for serving

Do this

  1. Heat the oven to 220 C. Line a large baking sheet with parchment and lightly coat it with cooking spray or neutral oil.
  2. In a shallow bowl, whisk the flour and cornstarch with the plant milk until smooth. In a second shallow bowl, combine the panko, smoked paprika, garlic powder, salt and black pepper.
  3. Halve and pit the avocados, remove the peel and cut each half into four thick wedges.
  4. Dip each avocado wedge in the flour mixture, let the excess drip off, then press gently into the seasoned panko until coated on all sides. Arrange the wedges on the prepared baking sheet without touching.
  5. Lightly spray or brush the tops with oil. Bake for 16 to 18 minutes, turning once, until crisp and deeply golden at the edges.
  6. Stir the vegan mayonnaise, lime juice, lime zest and cilantro together. Serve the avocado fries hot with the smoky lime dip.

Easy swaps

  • For a gluten-free version, use a 1-to-1 gluten-free flour blend and certified gluten-free breadcrumbs. Allergen note: standard flour and panko contain wheat.
  • Any unsweetened oat, soy, almond or pea milk works. Allergen note: choose a soy-free or nut-free plant milk when needed and check the label for cross-contact.
  • Replace vegan mayonnaise with plain unsweetened vegan yogurt. Allergen note: vegan mayonnaise and yogurt bases may contain soy or tree nuts depending on the brand.
  • Use parsley instead of cilantro for a milder herb flavour.
