What you’ll need
- 360 ml filtered water
- 2 plain white tea bags, verified vegan and alcohol-free
- 2 dried bay leaves, plus 2 small leaves for garnish
- 2 teaspoons vegan granulated cane sugar
- 120 ml unsweetened unfiltered apple juice, certified vegan
- 30 ml fresh lemon juice
- 120 ml chilled plain sparkling water
- 1/2 small Granny Smith apple, thinly sliced for garnish
- 2 long clear ice spears

Mix the drink
- Bring the filtered water just to a simmer. Remove from the heat, add the tea bags and 2 bay leaves, and steep for 3 minutes.
- Remove the tea bags. Stir in the cane sugar until dissolved, then leave the bay leaves in the tea for 7 more minutes.
- Discard the bay leaves and cool the tea completely in the refrigerator for about 45 minutes.
- Stir the chilled bay tea, apple juice and lemon juice together in a small pitcher.
- Add the sparkling water immediately before serving and stir once, gently, to preserve the bubbles.

Serve it beautifully
The glass, temperature and first aroma all shape the drink. Set those details before the final pour.
- Use two chilled slender Collins glasses to emphasize the drink’s clear pale-straw colour.
- Place one long clear ice spear in each glass, then pour the mocktail slowly down the side of the glass.
- Fan three thin Granny Smith slices at each rim and tuck in one small dry bay leaf as an aromatic garnish; the bay leaf is not intended to be eaten.
- Serve at once, very cold, while the fine carbonation is at its liveliest.
