Scarlet Static

Scarlet strawberry and black-pepper shrub mocktail over a large ice cube with strawberry garnish

Ripe strawberry, brisk apple-cider vinegar and cracked black pepper make a vivid still shrub that is tart, lightly sweet and built for slow sipping.

What you’ll need

  • 1 1/2 cups (200 g) hulled ripe strawberries, quartered
  • 2 tablespoons certified-vegan organic cane sugar
  • 3 tablespoons (45 mL) vegan apple cider vinegar
  • 1/4 cup (60 mL) cold filtered water
  • 2 tablespoons (30 mL) fresh lemon juice
  • 1/8 teaspoon freshly cracked black pepper, plus a tiny pinch for garnish
  • 1 small pinch fine sea salt
  • Ice cubes for shaking
  • 2 large clear ice cubes, for serving
  • 2 small strawberries, thinly sliced into fans for garnish

Mix the drink

  1. Combine the quartered strawberries and certified-vegan sugar in a bowl. Crush lightly with a fork, leaving some small pieces, and rest for 20 minutes until the fruit is glossy and juicy.
  2. Stir in the apple cider vinegar, cold water, lemon juice, black pepper and sea salt. Cover and refrigerate for 10 minutes.
  3. Pour the mixture through a fine-mesh sieve into a measuring jug. Press gently with the back of a spoon to collect the liquid without forcing seeds and thick pulp through. You should have about 1 cup (240 mL) shrub base.
  4. Fill a cocktail shaker halfway with ordinary ice. Add the shrub base, seal and shake firmly for 15 seconds until very cold.
  5. Place one large clear cube in each prepared glass. Fine-strain the drink evenly over the cubes, allowing about 1/2 cup (120 mL) per glass.
  6. Serve immediately; the drink is intentionally still rather than sparkling.

Serve it beautifully

The glass, temperature and first aroma all shape the drink. Set those details before the final pour.

  1. Use two chilled double-old-fashioned glasses to show the drink's scarlet colour and keep the aroma close.
  2. Serve each drink over one large clear cube; avoid crushed ice, which would dilute the shrub too quickly.
  3. Fan the slices from one small strawberry on each rim and dust only the fruit with a tiny pinch of black pepper.
  4. Keep the strained base refrigerated until shaking, then serve within two minutes so the drink is properly cold and the garnish stays fresh.
