Warm Black Sesame Nightcap

What you’ll need
- 30 g 100% black sesame paste, with no added ingredients
- 360 ml certified vegan unsweetened oat milk
- 120 ml cold water
- 30 ml pure date syrup
- 1 tsp finely grated fresh ginger
- 1/4 tsp alcohol-free vanilla bean powder
- 1/8 tsp fine sea salt
- 1 tsp black sesame seeds
- 2 fresh orange peel twists, cut directly from a washed orange

Mix the drink
- Toast the black sesame seeds in a dry small saucepan over medium heat for 60 to 90 seconds, shaking frequently, until fragrant. Transfer them immediately to a plate so they do not scorch.
- In the same saucepan, whisk the black sesame paste with the water a little at a time until completely smooth. Whisk in the oat milk, date syrup, ginger, vanilla bean powder and salt.
- Warm over medium-low heat for 4 to 5 minutes, whisking often, until steaming and 60 to 65°C (140 to 149°F). Do not let the mixture boil.
- Blend directly in the pan with an immersion blender for 20 seconds, keeping the blade submerged, until glossy and lightly aerated. Alternatively, whisk vigorously for 45 seconds. Taste and add no more than 1 extra teaspoon date syrup if desired.

Serve it beautifully
The glass, temperature and first aroma all shape the drink. Set those details before the final pour.
- Prewarm two 250 ml handleless ceramic cups with hot water for 1 minute, then empty and dry them; this drink is intentionally served without ice.
- Divide the mocktail between the warm cups while it remains at approximately 60 to 65°C (140 to 149°F).
- Express one fresh orange peel over each surface, hook it over the rim, and finish each drink with 1/2 tsp toasted black sesame seeds.
- Serve immediately after garnishing so the drink is warm, fragrant and lightly aerated; give it a brief stir if it waits longer than 5 minutes.
