Pomegranate-Rosemary Crushed-Ice Cobbler

Tart pomegranate, aromatic rosemary and bright lime tumble over fine crushed ice in a jewel-red cobbler with a crisp, quietly herbal finish.

What you’ll need
- 120 mL water
- 40 mL pure maple syrup
- 2 fresh rosemary sprigs, plus 2 small sprigs for garnish
- 300 mL chilled 100% pomegranate juice
- 90 mL chilled white grape juice
- 45 mL fresh lime juice
- 1 small pinch fine sea salt
- 2 cups fine crushed ice, plus more as needed
- 60 mL chilled plain soda water
- 2 thin lime wheels
- 2 teaspoons fresh pomegranate arils

Mix the drink
- Combine the water, maple syrup and two rosemary sprigs in a small saucepan. Bring just to a simmer, remove from the heat and gently press the rosemary with a spoon.
- Steep for 8 minutes, then strain into a small jar. Cool for 5 minutes and refrigerate for 20 minutes until cold. The syrup must be fully chilled before mixing.
- Add 50 mL chilled rosemary syrup, pomegranate juice, white grape juice, lime juice and sea salt to a cocktail shaker or tightly sealed jar.
- Fill the shaker halfway with crushed ice. Shake briskly for 8 seconds, just long enough to chill and lightly aerate the juices.
- Divide the entire mixture, including the shaken ice, between the prepared goblets. Add more fresh crushed ice to form a low rounded crown.
- Pour 30 mL soda water slowly over each drink and give one gentle lift with a long spoon so the bubbles travel through the ice without flattening.

Serve it beautifully
The glass, temperature and first aroma all shape the drink. Set those details before the final pour.
- Chill two 350 mL footed goblets for at least 10 minutes before assembling the drinks.
- Use fine, dry crushed ice rather than large cubes; it creates the cobbler texture and keeps the garnish supported above the liquid.
- Set one thin lime wheel against the inside of each glass, then rest a small rosemary sprig and 1 teaspoon pomegranate arils on the ice crown.
- Serve very cold, ideally between 3 and 5°C, with a short reusable straw or cobbler spoon.
- Carry the drinks to the table immediately after adding the soda water and serve within two minutes while the light sparkle is lively.
