Ruby Grapefruit Rooibos Spritz

Ruby grapefruit and berry-bright rooibos meet rosemary, lime and fine bubbles in a polished sunset spritz.

What you’ll need
- 2 caffeine-free rooibos tea bags
- 180 ml boiling water
- 1 small rosemary sprig, plus 2 tips for garnish
- 150 ml fresh ruby grapefruit juice
- 20 ml fresh lime juice
- 20 ml pure maple syrup
- 120 ml chilled unflavoured sparkling water
- 8 large clear ice cubes
- 2 thin ruby grapefruit half-moons

Mix the drink
- Steep the rooibos tea bags and one rosemary sprig in boiling water for 6 minutes. Remove both without squeezing the bags, then chill the tea for 30 minutes.
- Add 120 ml chilled rooibos tea, grapefruit juice, lime juice and maple syrup to an ice-filled shaker. Shake firmly for 10 seconds.
- Divide four clear ice cubes between two chilled stemless goblets and double-strain the mixture evenly into the glasses.
- Top each glass with 60 ml sparkling water and give one gentle lift with a bar spoon to combine without losing the bubbles.

Serve it beautifully
The glass, temperature and first aroma all shape the drink. Set those details before the final pour.
- Use chilled stemless goblets or large wine glasses and add four large clear ice cubes to each.
- Serve immediately after topping with sparkling water, at refrigerator-cold temperature, so the citrus stays lively and the bubbles remain fine.
- Garnish each glass with a ruby grapefruit half-moon and a small rosemary tip, briefly clapping the rosemary between your palms to release its aroma.
