What you’ll need

  • 2 whole dried black limes (loomi), rinsed and lightly cracked
  • 1/2 teaspoon coriander seeds
  • 300 ml filtered water
  • 2 tablespoons pure date syrup
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon pure vanilla powder, not vanilla extract
  • 1 small pinch fine sea salt
  • 240 ml plain sparkling water, thoroughly chilled
  • 2 long clear ice spears
  • 2 unsweetened dried lime wheels, for garnish

Mix the drink

  1. Toast the coriander seeds in a small dry saucepan over medium heat for about 60 seconds, shaking the pan, until fragrant. Lightly crush them with the back of a spoon.
  2. Add the cracked black limes and 300 ml filtered water. Bring to a gentle simmer, then cook uncovered for 12 minutes until the liquid is deep amber and aromatic.
  3. Remove the pan from the heat and steep for 10 minutes. Strain through a fine sieve, pressing the black limes gently, then strain once more through a clean coffee filter or fine cloth to catch the coriander fragments.
  4. While the infusion is warm, whisk in the date syrup, lemon juice, vanilla powder and sea salt until fully dissolved. Cool for 15 minutes, then refrigerate for 45 minutes or until thoroughly cold.
  5. Measure 90 ml of the chilled black-lime concentrate into each prepared glass. Add 120 ml sparkling water to each and stir once from the bottom to combine without flattening the bubbles.

Serve it beautifully

The glass, temperature and first aroma all shape the drink. Set those details before the final pour.

  1. Chill two 300 ml footed soda or pilsner glasses for at least 15 minutes before mixing.
  2. Place one long clear ice spear in each glass; the single large piece chills the drink while keeping dilution slow.
  3. Clip one dried lime wheel to each rim, angling it above the dark surface so its shape stays visible.
  4. Serve refrigerator-cold within 3 minutes of adding the sparkling water, while the fine bubbles and black-lime aroma are at their liveliest.
