Ruby plum black tea mocktail in a chilled coupe with ginger foam, plum fan and shiso garnish

Ripe plum, brisk black tea and ginger meet a soft aquafaba crown in a ruby spritz made for the golden edge of evening.

What you’ll need

  • 2 ripe red plums, pitted and chopped, plus thin slices for garnish
  • 180 ml freshly brewed strong black tea, cooled
  • 30 ml fresh lemon juice
  • 30 ml ginger syrup
  • 30 ml aquafaba from unsalted chickpeas
  • 120 ml chilled plain sparkling water
  • 4 ice cubes for shaking
  • 2 small shiso or mint leaves, for garnish

Mix the drink

  1. Blend the chopped plums with the cooled black tea until smooth, then strain through a fine sieve, pressing gently.
  2. Add 180 ml of the plum-tea mixture, lemon juice, ginger syrup and aquafaba to a shaker without ice. Shake vigorously for 20 seconds to build foam.
  3. Add four ice cubes and shake for another 12 seconds until very cold.
  4. Double-strain evenly into two chilled coupe glasses, then slowly add 60 ml sparkling water to each glass down the side to preserve the foam.

Serve it beautifully

The glass, temperature and first aroma all shape the drink. Set those details before the final pour.

  1. Chill two ribbed coupe glasses for at least 30 minutes.
  2. Serve without ice in the glass so the texture stays silky rather than diluted.
  3. Fan three thin plum slices at one rim and add one small shiso or mint leaf.
  4. Serve immediately after topping, ideally at the start of a relaxed evening meal while the foam is fresh.
