Ripe pear and woodsy sage settle into a pale, sparkling Collins with clean lemon brightness and a quietly elegant finish.

What you’ll need

  • 2 ripe Bartlett pears (about 300 g), cored and chopped
  • 1/2 cup water
  • 6 fresh sage leaves
  • 1 tablespoon maple syrup
  • 3 tablespoons fresh lemon juice
  • 1 small pinch fine sea salt
  • 1 cup well-chilled plain sparkling water
  • 2 long clear ice spears or 8 large ice cubes
  • 4 very thin pear slices, for garnish
  • 2 small fresh sage leaves, for garnish
  • 2 narrow strips lemon peel, for garnish

Mix the drink

  1. Combine the chopped pears, water, 6 sage leaves and maple syrup in a small saucepan. Bring to a gentle simmer and cook for 8 minutes, stirring once or twice, until the pear is very tender.
  2. Remove and discard the sage leaves. Blend the pear mixture until smooth, then press it through a fine-mesh sieve. You should have about 1 cup of pear base.
  3. Stir the lemon juice and salt into the pear base. Refrigerate for at least 30 minutes, until thoroughly cold.
  4. Divide the chilled pear base between two Collins glasses and stir each portion briefly with its ice.
  5. Slowly add 1/2 cup sparkling water to each glass. Give each drink one gentle lift with a bar spoon to combine without losing the bubbles.

Serve it beautifully

The glass, temperature and first aroma all shape the drink. Set those details before the final pour.

  1. Use two chilled Collins glasses with one long clear ice spear in each, or four large ice cubes per glass.
  2. Fan two pear slices at each rim, tuck in one small sage leaf and place one narrow lemon peel inside the glass.
  3. Serve immediately at refrigerator-cold temperature so the pear stays fresh and the sparkling water remains lively.
