Pale coral alcohol-free cantaloupe and verjuice cooler over clear ice with a melon ribbon and basil garnish

Silky cantaloupe, tart white-grape verjuice and pink peppercorn drift over basil in a softly coral cooler built for slow poolside sipping.

What you’ll need

  • 300 g ripe cantaloupe flesh, chilled, plus 2 thin ribbons for garnish
  • 80 ml alcohol-free white grape verjuice
  • 30 ml fresh lime juice
  • 20 ml agave syrup
  • 6 fresh basil leaves, plus 2 small leaves for garnish
  • 1/4 teaspoon pink peppercorns, lightly crushed
  • 120 ml chilled plain sparkling water
  • 2 large clear ice cubes

Mix the drink

  1. Blend the chilled cantaloupe until completely smooth. Strain through a fine sieve without pressing hard to yield about 180 ml juice.
  2. Gently clap the six basil leaves between your palms and add them to a shaker with the cantaloupe juice, alcohol-free verjuice, lime juice, agave syrup and crushed pink peppercorns.
  3. Add four regular ice cubes and shake for 12 seconds until very cold.
  4. Double-strain evenly into the prepared glasses over the large clear ice cubes.
  5. Slowly top each glass with 60 ml sparkling water and stir once from the bottom.

Serve it beautifully

The glass, temperature and first aroma all shape the drink. Set those details before the final pour.

  1. Use two chilled low stemless tumblers or double old-fashioned glasses to showcase the pale coral colour.
  2. Place one large clear ice cube in each glass before straining the drink.
  3. Fold a thin cantaloupe ribbon into a wave on a cocktail pick and rest it across each rim with one small basil leaf.
  4. Serve immediately after topping, very cold, in late afternoon or alongside a light summer meal.
