Ivory toasted rice, coconut and cardamom mocktail over pebble ice with toasted coconut and an orange twist

Toasted jasmine rice, light coconut and cardamom blend into a silky ivory cooler with a bright orange lift and a gently smoky finish.

What you’ll need

  • 80 g cooked jasmine rice, completely cooled
  • 120 ml light coconut milk, certified vegan and alcohol-free
  • 240 ml filtered water
  • 1 tablespoon pure maple syrup
  • 3 green cardamom pods, lightly crushed
  • 2 wide strips orange zest, plus 2 slim twists for garnish
  • 1 teaspoon fresh lemon juice
  • 1/4 teaspoon alcohol-free vanilla flavour
  • 1 small pinch fine sea salt
  • 2 cups pebble ice
  • 2 teaspoons unsweetened toasted coconut chips

Mix the drink

  1. Toast the cooked jasmine rice in a dry skillet over medium heat for 5 to 7 minutes, stirring often, until dry in spots and lightly golden. Cool for 10 minutes.
  2. Combine the water, crushed cardamom pods and wide orange-zest strips in a small saucepan. Bring just to a simmer, remove from the heat and steep for 10 minutes. Strain and chill for 45 minutes.
  3. Blend the toasted rice, chilled cardamom-orange water, coconut milk, maple syrup, lemon juice, alcohol-free vanilla flavour and salt for 45 seconds.
  4. Strain through a fine-mesh sieve into a chilled pitcher, pressing gently. Do not force thick rice solids through the sieve.
  5. Stir the strained drink once and keep it refrigerated until serving.

Serve it beautifully

The glass, temperature and first aroma all shape the drink. Set those details before the final pour.

  1. Use two chilled clear double old-fashioned glasses so the warm ivory colour remains visible.
  2. Fill each glass three-quarters full with fresh pebble ice, then pour the cooler slowly over the ice.
  3. Finish each glass with toasted coconut chips, one slim orange twist and the lightest dusting of ground cardamom.
  4. Serve very cold within 5 minutes of pouring, before the pebble ice begins to dilute the toasted-rice flavour.
