01

What you’ll need

  • 2 ripe green kiwis, peeled and roughly chopped
  • 2 celery stalks, washed and divided
  • 10 fresh basil leaves, plus 2 small sprigs for garnish
  • 45 ml freshly squeezed lime juice
  • 30 ml pure maple syrup
  • 1 small pinch fine sea salt
  • 180 ml chilled plain sparkling water
  • 6 large clear ice cubes or 2 long ice spears

Mix the drink

  1. Place two Collins glasses in the refrigerator for 15 minutes so the drink stays crisp without excessive dilution.
  2. Use a vegetable peeler to shave two long ribbons from one celery stalk. Coil the ribbons in ice water while preparing the drink, then reserve them for garnish.
  3. Finely chop the remaining celery. Add it to a cocktail shaker with the kiwi, basil leaves, lime juice, maple syrup, and sea salt.
  4. Muddle firmly for 30 seconds, pressing the kiwi and celery until juicy and fragrant but not completely puréed.
  5. Add four ordinary ice cubes to the shaker, seal, and shake vigorously for 12 seconds.
  6. Double-strain through a fine-mesh sieve into a small chilled pitcher, pressing gently on the solids to capture the bright green liquid without forcing through excess pulp.
  7. Divide the mixture between the chilled glasses over fresh ice, then slowly add 90 ml sparkling water to each glass. Stir once from bottom to top to preserve the bubbles.

Serve it beautifully

The glass, temperature and first aroma all shape the drink. Set those details before the final pour.

  1. Use tall, well-chilled Collins glasses to show the emerald colour and rising bubbles.
  2. Add three large clear cubes or one long ice spear to each glass immediately before pouring.
  3. Clip one drained celery ribbon to each rim and tuck in a small basil sprig without submerging the leaves.
  4. Serve very cold as soon as the sparkling water is added, ideally within two minutes of the final stir.
