Frozen green grapes, lime and fresh ginger whirl into a pale, frosty cooler with a delicate fennel finish.

What you’ll need

  • 260 g seedless green grapes, plus 6 grapes for garnish
  • 120 ml unsweetened coconut water, certified alcohol-free
  • 2 teaspoons agave nectar
  • 2 tablespoons fresh lime juice
  • 1 teaspoon finely grated fresh ginger
  • 1/8 teaspoon fennel seeds, lightly crushed
  • 120 ml chilled plain sparkling water
  • 1 small fennel frond for garnish

Mix the drink

  1. Spread the 260 g grapes on a small tray and freeze for at least 3 hours, until solid. Chill two stemless wine glasses at the same time.
  2. Steep the crushed fennel seeds in the coconut water for 10 minutes, then strain and refrigerate until cold.
  3. Blend the frozen grapes, fennel-infused coconut water, agave, lime juice and ginger until evenly slushy. Pause once to scrape down the blender if needed.
  4. Add the sparkling water and pulse only twice, just enough to combine without losing all the bubbles.
  5. Taste and add up to 1 teaspoon more lime juice if the grapes are especially sweet.

Serve it beautifully

The glass, temperature and first aroma all shape the drink. Set those details before the final pour.

  1. Use well-chilled stemless wine glasses so the broad bowl shows the pale green frozen texture.
  2. Divide the cooler immediately between the glasses; the frozen grapes provide the ice, so no additional cubes are needed.
  3. Thread three reserved grapes onto each pick and rest it across the rim, then add a small fennel frond.
  4. Serve very cold within 5 minutes of blending, before the granita texture softens.
