Carrot, tart sea buckthorn and lemon glow with toasted coriander and vanilla in a bright, gently sparkling cooler designed for a leisurely harvest lunch.

What you’ll need

  • 1 1/2 tsp whole coriander seeds, divided
  • 80 ml filtered water
  • 60 g certified-vegan organic cane sugar
  • 1 piece vanilla bean, 5 cm long, split lengthwise
  • 240 ml pure unsweetened carrot juice, chilled
  • 60 ml pure unsweetened sea buckthorn juice or purĂ©e, verified alcohol-free and additive-free
  • 30 ml freshly squeezed lemon juice
  • 1/8 tsp fine sea salt
  • 160 ml unflavoured sparkling mineral water, chilled
  • 1 medium carrot, peeled, for two garnish ribbons

Mix the drink

  1. Toast 1 teaspoon coriander seeds in a dry small saucepan over medium heat for 60 to 90 seconds, just until fragrant. Lightly crush them with the base of a measuring cup.
  2. Add the filtered water, certified-vegan cane sugar and split vanilla bean to the saucepan. Bring to a gentle simmer, stirring until the sugar dissolves, then remove from the heat and steep for 12 minutes.
  3. Strain the coriander-vanilla syrup through a fine sieve, discard the solids and refrigerate for at least 30 minutes. Measure 40 ml for the drinks; refrigerate the remainder for another alcohol-free beverage for up to 7 days.
  4. Heat the oven to 110 C (225 F). Use a vegetable peeler to cut two long, thin ribbons from the carrot. Lay them on a parchment-lined tray and bake for 18 to 22 minutes until dry at the edges but still flexible. Curl each warm ribbon around a wooden spoon handle, cool for 5 minutes, then slide it off carefully.
  5. Combine the chilled carrot juice, sea buckthorn juice, lemon juice, 40 ml chilled coriander-vanilla syrup and sea salt in one cocktail tin or lidded jug. Pour the mixture between two tins or jugs three times to blend and lightly aerate it without making a thick foam.
  6. Divide the mixture between the chilled serving glasses, then slowly add 80 ml sparkling mineral water to each. Stir once from the bottom with a bar spoon to preserve the fine bubbles.
  7. Lightly crush the remaining 1/2 teaspoon toasted coriander seeds and reserve them for the garnish. All ingredients in this recipe are plant-based, and the specified juices, sweetener, vanilla bean and mineral water contain no alcohol or fining agents.

Serve it beautifully

The glass, temperature and first aroma all shape the drink. Set those details before the final pour.

  1. Chill two clear, double-walled glass teacups or small handled glass cups for 15 minutes before serving.
  2. Serve without ice so dilution does not mute the carrot and sea buckthorn; every liquid ingredient should be refrigerator-cold before mixing.
  3. Rest one dried carrot curl neatly across each rim and add a tiny pinch of the crushed toasted coriander to the top of the curl.
  4. Pour only when the food is ready and serve within 3 minutes so the drink arrives very cold with its gentle sparkle intact.
