White Peach-Chamomile Aquafaba Sour

Alcohol-free white peach and chamomile sour with aquafaba foam in a chilled Nick and Nora glass

White peach, cool chamomile and lemon meet a fine aquafaba foam in a pale-blush sour made for an unhurried brunch.

What you’ll need

  • 120 mL freshly boiled water
  • 2 plain chamomile tea bags labelled vegan and free of honey flavouring
  • 1 ripe white peach (about 150 g), plus 4 thin slices for garnish
  • 45 mL fresh lemon juice
  • 30 mL pure agave syrup
  • 45 mL aquafaba from unsalted canned chickpeas
  • 1/8 teaspoon culinary orange blossom water labelled alcohol-free
  • 1/16 teaspoon fine sea salt
  • 8 medium ice cubes, for shaking
  • 6 pink peppercorns, lightly crushed, for garnish

Mix the drink

  1. Pour the boiled water over the chamomile tea bags and steep for 5 minutes. Remove the bags without squeezing, then refrigerate the tea for 20 minutes until thoroughly cold.
  2. Peel and pit the peach. Blend the flesh until completely smooth, then press it through a fine sieve; measure 90 mL of strained peach purée.
  3. Add 90 mL chilled chamomile tea, the peach purée, lemon juice, agave syrup, aquafaba, alcohol-free orange blossom water and salt to a cocktail shaker without ice.
  4. Seal the shaker and dry-shake vigorously for 20 seconds to begin aerating the aquafaba.
  5. Add the ice cubes and shake hard for another 15 seconds, until the shaker is very cold.
  6. Strain the drink into the empty half of the shaker, discard the ice, reseal and shake without ice for a final 15 seconds to refine the foam.
  7. Double-strain immediately through a fine tea strainer into the chilled glasses, dividing the liquid and foam evenly.

Serve it beautifully

The glass, temperature and first aroma all shape the drink. Set those details before the final pour.

  1. Chill two 150 to 180 mL Nick and Nora glasses for at least 15 minutes before mixing.
  2. Serve the drink up, without ice, so the pale peach colour and fine aquafaba cap remain clear.
  3. Cut two thin peach slices halfway through and fan them neatly on the rim of each glass; place three lightly crushed pink peppercorns on each foam cap.
  4. The drink should reach the table at approximately 4 to 6°C, within 2 minutes of straining, before the foam begins to relax.
