Kiwi-Lemongrass Goblet Cooler

What you’ll need
- 3 fresh lemongrass stalks
- 2 cups boiling water
- 3 ripe kiwis (about 225 g peeled), with 2 thin centre slices reserved for garnish
- 3 tablespoons fresh lime juice
- 2 tablespoons pure agave syrup
- 1/8 teaspoon fine sea salt
- 1 cup chilled plain sparkling water
- 2 long clear ice spears or 2 cups large ice cubes

Mix the drink
- Remove the tough outer leaves from 2 lemongrass stalks. Bruise the pale portions with the flat side of a knife, slice them thinly and place them in a heatproof jug.
- Pour the boiling water over the sliced lemongrass, cover and steep for 15 minutes. Strain, discard the solids and refrigerate the infusion for 45 minutes, or until thoroughly cold.
- Cut the remaining lemongrass stalk lengthwise into 2 neat garnish spears. Reserve 2 thin kiwi slices, then place the remaining kiwi flesh in a blender with 1 1/4 cups chilled lemongrass infusion, the lime juice, agave syrup and sea salt.
- Blend until smooth, then pass the mixture through a coarse-mesh sieve into a jug, pressing gently so a little kiwi texture remains.
- Fill a cocktail shaker halfway with ice. Add the kiwi-lemongrass mixture and shake firmly for 10 seconds, then strain evenly into the prepared goblets.
- Top each drink with 1/2 cup chilled sparkling water and stir once, very gently, to preserve the bubbles.

Serve it beautifully
The glass, temperature and first aroma all shape the drink. Set those details before the final pour.
- Chill 2 large stemmed goblets in the refrigerator for 10 minutes before mixing.
- Place 1 long clear ice spear, or several large ice cubes, in each cold goblet so the drink stays brisk without diluting too quickly.
- Divide the shaken kiwi base between the glasses, top with sparkling water and serve refrigerator-cold.
- Garnish each rim with a reserved kiwi wheel and stand a lemongrass spear upright beside the ice.
- Serve within 3 minutes of adding the sparkling water, while the cooler is at its brightest and most effervescent.
