Cocoa Citrus Shakerato

What you’ll need
- 120 ml chilled unsweetened cold-brew coffee concentrate made only from coffee and water
- 80 ml chilled filtered water
- 40 ml fresh orange juice, finely strained
- 20 ml pure maple syrup
- 10 ml fresh lemon juice
- 1/2 tsp unsweetened cocoa powder
- 1/8 tsp pure vanilla bean powder
- 12 large ice cubes, for shaking
- 2 wide strips fresh orange peel
- 1 tsp roasted cacao nibs, for garnish

Mix the drink
- Chill two Nick and Nora glasses in the refrigerator for at least 20 minutes.
- Whisk the cold-brew concentrate, filtered water, orange juice, maple syrup, lemon juice, cocoa powder and vanilla bean powder in a small pitcher until the cocoa is fully dispersed.
- Fill a cocktail shaker with the ice cubes and pour in the coffee mixture. Seal and shake hard for 15 seconds to chill the drink and create a fine natural crema.
- Double-strain immediately through the shaker strainer and a fine-mesh sieve, dividing the drink evenly between the two chilled glasses.

Serve it beautifully
The glass, temperature and first aroma all shape the drink. Set those details before the final pour.
- Serve straight up in well-chilled Nick and Nora glasses with no ice in the finished drink.
- Express one orange peel over each glass, rub it lightly around the rim and clip it neatly to the edge. Place a few roasted cacao nibs beside the glass rather than in the drink.
- Serve immediately after straining, while the shakerato is very cold and its delicate crema is still intact. Every listed ingredient is vegan and alcohol-free.
