Apricot nectar and fragrant jasmine tea glow beneath fine bubbles, lemon brightness and a whisper of vanilla in a calm, sunset-coloured cooler.

What you’ll need
- 240 ml water heated to 80°C (176°F)
- 2 teaspoons loose jasmine green tea or 2 jasmine green tea bags
- 120 ml apricot nectar, confirmed alcohol-free
- 30 ml fresh lemon juice
- 20 ml pure maple syrup
- 1/4 teaspoon alcohol-free vanilla extract
- 20 ml aquafaba from unsalted chickpeas
- 160 ml chilled plain sparkling water
- 2 long clear ice spears or 8 large ice cubes
- 2 dried apricot crescents and 2 narrow lemon-peel ribbons, for garnish

Mix the drink
- Steep the jasmine green tea in the hot water for 3 minutes. Strain or remove the bags, then cool and refrigerate for at least 45 minutes.
- Add 180 ml chilled jasmine tea, apricot nectar, lemon juice, maple syrup, alcohol-free vanilla and aquafaba to a shaker without ice.
- Shake vigorously for 20 seconds to create a light foam.
- Add four ice cubes and shake for another 10 seconds, until very cold.
- Double-strain evenly into the prepared glasses and slowly top each with 80 ml sparkling water down the inside wall.

Serve it beautifully
The glass, temperature and first aroma all shape the drink. Set those details before the final pour.
- Use two chilled narrow Collins glasses so the apricot colour and fine bubbles stay visible.
- Place one long clear ice spear in each glass, or use four large cubes if spears are unavailable.
- Clip one dried apricot crescent to each rim and curl a lemon-peel ribbon alongside it.
- Serve very cold as soon as the sparkling water is added, ideally at sunset or before a light evening meal.
