Tamarind–Ginger Crushed-Ice Swizzle
Amber Relay

Tamarind’s bright tang passes the baton to fresh ginger, orange and lime in this copper-toned, crushed-ice swizzle built for bold, savoury suppers.
01
What you’ll need
- 45 g seedless pure tamarind pulp, verified free of additives
- 240 ml just-boiled water
- 20 g fresh ginger, thinly sliced
- 2 green cardamom pods, lightly crushed
- 50 ml pure maple syrup
- 90 ml freshly squeezed orange juice, finely strained
- 35 ml freshly squeezed lime juice, finely strained
- 160 ml chilled filtered water
- 1 small pinch fine sea salt
- 500 g crushed ice, divided
- 2 thin fresh orange half-wheels, for garnish
- 2 pieces vegan crystallized ginger made without honey, gelatin or confectioner’s glaze, for garnish
02
Mix the drink
- Place the tamarind pulp, sliced ginger and crushed cardamom pods in a heatproof jug. Pour over the just-boiled water, stir well and steep for 15 minutes.
- Mash the softened tamarind against the side of the jug with a spoon, then strain the infusion through a fine-mesh sieve into a clean jug. Press firmly on the solids; you should have about 180 ml. Let it cool for 5 minutes.
- Whisk the maple syrup, orange juice, lime juice and sea salt into the tamarind infusion until completely combined. Cover and refrigerate for 30 minutes, until thoroughly cold.
- Add the 160 ml chilled filtered water to the cold base and stir. Taste once; the drink should be tart, warmly spiced and only gently sweet.
- Fill two tall glasses halfway with crushed ice. Divide the base between them, insert a bar spoon or swizzle stick into each glass and rapidly roll it between your palms for 15–20 seconds, lifting slightly as you churn so the drink becomes evenly frosted and diluted.
- Pack each glass with the remaining crushed ice to form a neat crown, then garnish and serve at once.

Serve it beautifully
The glass, temperature and first aroma all shape the drink. Set those details before the final pour.
- Use two chilled 350 ml ribbed Collins glasses; their tall shape keeps the crushed-ice swizzle cold and shows off its amber colour.
- Fill with fresh crushed ice in two stages—half before swizzling and the remainder after—to create the correct dilution and a stable garnish bed.
- Rest one orange half-wheel against each rim and set one verified-vegan crystallized ginger piece on a short bamboo pick across the ice.
- Serve refrigerator-cold immediately after swizzling, before the ice crown settles; provide a reusable straw so the tart and spiced layers stay integrated.

What to pair with it
Jerk-spiced tofu skewers with charred scallions—the tamarind’s acidity refreshes between smoky, peppery bites.
Coconut rice–stuffed mini peppers—the citrus and ginger lift the creamy, gently sweet filling.
Roasted sweet potato chaat with chickpeas and cilantro—the drink’s tartness echoes the chutney-like flavours without competing with the spices.
