Overnight Success: Mango-Cardamom Oat Cups

Creamy overnight oats meet juicy mango, warm cardamom and a bright squeeze of lime in a make-ahead breakfast that is ready when you are.
Grab this
- 2 cups old-fashioned rolled oats
- 2 cups unsweetened fortified soy milk
- 1 cup unsweetened vegan coconut yogurt
- 3 tablespoons chia seeds
- 3 tablespoons pure maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cardamom
- 1/4 teaspoon fine salt
- 2 cups diced ripe mango, divided
- 1 tablespoon fresh lime juice
- 2 tablespoons unsweetened coconut flakes
- 1 teaspoon finely grated lime zest, optional
Do this
- 1. Add the oats, soy milk, coconut yogurt, chia seeds, maple syrup, vanilla, cardamom and salt to a large bowl. Stir thoroughly, scraping the bottom so no dry pockets remain.
- 2. Cover the bowl and refrigerate for at least 6 hours or overnight. The oats and chia will absorb the liquid and become thick and creamy.
- 3. Toss 1 1/2 cups of the diced mango with the lime juice. Gently fold half of this mango into the chilled oats, then loosen the mixture with a splash of soy milk if you prefer a softer texture.
- 4. Divide the oats among four cups or bowls. Top with the remaining lime-dressed mango, the reserved 1/2 cup plain mango, coconut flakes and lime zest. Serve cold.
Easy swaps
- For a soy-free version, use unsweetened oat milk and add 1 extra tablespoon of chia seeds. Soy milk is a common allergen, and anyone avoiding gluten should also choose certified gluten-free oats.
- For a coconut-free version, use unsweetened soy yogurt and replace the coconut flakes with 2 tablespoons of pumpkin seeds. Coconut can be an allergen for some people, while pumpkin seeds should be avoided by anyone with a seed allergy.
- Fresh or thawed frozen mango both work. Diced peaches or pineapple can replace it in the same quantity.
- Agave nectar can replace the maple syrup tablespoon for tablespoon. Check flavoured yogurts and plant milks for added sugars if using them.
