Date Night Bites: Cocoa-Tahini Stuffed Dates

Chewy Medjool dates hide a creamy cocoa-tahini centre, then get a dark chocolate drizzle and pumpkin-seed crunch for an easy no-bake snack.
Grab this
- 8 large Medjool dates
- 3 tbsp tahini
- 1 tbsp unsweetened cocoa powder
- 2 tsp maple syrup
- 1/4 tsp vanilla extract
- 1 small pinch fine salt
- 30 g vegan dark chocolate, chopped
- 2 tbsp toasted pumpkin seeds, roughly chopped
- 1/2 tsp flaky salt, optional
Do this
- Line a small plate or tray with parchment paper.
- Split each date lengthwise without cutting all the way through, remove the pit, and open the date like a little pocket.
- Stir the tahini, cocoa powder, maple syrup, vanilla and fine salt in a small bowl until smooth.
- Spoon the cocoa-tahini filling evenly into the dates and arrange them on the prepared plate.
- Melt the dark chocolate in a microwave-safe bowl in 20-second bursts, stirring after each burst, until smooth.
- Drizzle the chocolate over the dates, then scatter with pumpkin seeds and the optional flaky salt.
- Chill for 10 minutes, or until the chocolate is set, then serve two stuffed dates per person.
Easy swaps
- Use sunflower seed butter instead of tahini for a sesame-free version. Allergen note: tahini contains sesame.
- Agave syrup can replace the maple syrup in the same quantity.
- Use roasted sunflower seeds instead of pumpkin seeds. Chopped pistachios also work, but add a tree-nut allergen.
- Choose dark chocolate labelled dairy-free or vegan. Allergen note: some brands may contain milk, soy or traces of nuts, so check the package for your needs.
