Frozen Mango-Lemongrass Coupe

Ripe mango, fresh lime and a fragrant lemongrass infusion whirl into a golden frozen coupe with a clean tropical finish and no alcohol in sight.

What you’ll need
- 1 large ripe mango, peeled and diced (about 300 g flesh)
- 1 large lemongrass stalk, tough outer layer removed and tender white portion thinly sliced
- 1/2 cup boiling water
- 2 tablespoons pure maple syrup
- 1/3 cup fresh lime juice
- 1/2 cup unsweetened coconut water
- 1 small pinch fine sea salt
- 2 cups ice cubes
- 2 thin lime wheels, for garnish
- 2 slim lemongrass ribbons, for garnish

Mix the drink
- Place the sliced lemongrass in a heatproof cup and lightly press it with the back of a spoon to release its aroma.
- Pour the boiling water over the lemongrass and steep for 15 minutes. Stir in the maple syrup until dissolved, then strain through a fine sieve and discard the solids.
- Cool the infusion for 10 minutes, then refrigerate it for 30 minutes. Place two coupe glasses in the freezer during the last 10 minutes of chilling.
- Add the chilled lemongrass infusion, mango, lime juice, coconut water, salt and ice to a high-speed blender in that order.
- Blend on high for 35 to 45 seconds until completely smooth and evenly frozen. Stop once to scrape down the sides if needed, but avoid over-blending or the drink will become watery.
- Pour immediately into the chilled coupe glasses, dividing the mixture evenly.

Serve it beautifully
The glass, temperature and first aroma all shape the drink. Set those details before the final pour.
- Use thoroughly chilled coupe glasses to keep the frozen texture firm without adding loose ice to the finished drink.
- Pour the blended mocktail to just below each rim while the mixture is still thick and spoonable.
- Rest one thin lime wheel and one knotted lemongrass ribbon neatly on each rim, keeping the garnish light enough that it does not tip the glass.
- Serve immediately at its coldest, ideally within three minutes of blending, before the fine ice begins to separate.
