  • 1/4 teaspoon alcohol-free pure vanilla powder
  • 1/8 teaspoon fine sea salt
  • 1 1/2 cups unsweetened rice milk, certified vegan and well chilled
  • 1/4 cup vegan oat cream, well chilled
  • 1 teaspoon black sesame seeds, for the rims

  • 2 cups ice cubes, for shaking

Mix the drink

  1. Grind the 3 tablespoons toasted black sesame seeds in a spice grinder until very fine.
  2. Transfer the ground sesame to a blender. Add the hot water and blend for 30 seconds to form a smooth dark paste, scraping down the sides once.
  3. Add the 3 tablespoons maple syrup, alcohol-free vanilla powder, salt, rice milk and oat cream. Blend for 45 seconds, until evenly pearl-grey and silky.
  4. Pour the mixture through a fine-mesh sieve into a covered jug, pressing lightly. Refrigerate for 20 minutes so it is thoroughly cold.
  5. Combine the rim sesame seeds and cane sugar on a small plate. Brush one half of each glass rim with the remaining teaspoon of maple syrup, then dip only that half into the sesame-sugar mixture.
  6. Fill a cocktail shaker halfway with ice. Add half the chilled sesame mixture and shake firmly for 12 seconds. Double-strain into the first prepared glass, then repeat with fresh ice and the remaining mixture.

Serve it beautifully

The glass, temperature and first aroma all shape the drink. Set those details before the final pour.

  1. Use two thoroughly chilled Nick and Nora glasses or small coupes so the compact serving stays cold and aromatic.
  2. Serve the drink up, with no ice in the glass; the shaking ice supplies the dilution and chill.
  3. Keep the black-and-white sesame garnish to a neat half-rim so each guest can choose a plain or textured sip.
  4. Serve immediately after double-straining, while the drink is very cold and its texture is at its smoothest.
