Ripe pear, lemon and a whisper of saffron meet lively bubbles in a golden aperitif that feels instantly celebratory.

What you’ll need

  • 1 ripe pear, peeled and chopped
  • 120 ml cold water
  • 2 tsp maple syrup
  • 1 tbsp fresh lemon juice
  • 1 small pinch saffron threads
  • 180 ml chilled sparkling water
  • 4 large clear ice cubes
  • 2 thin pear fans and 2 small rosemary sprigs, for serving

Mix the drink

  1. Combine the pear, cold water, maple syrup, lemon juice and saffron in a blender. Blend until completely smooth.
  2. Pass the mixture through a fine-mesh sieve, pressing gently. Chill the strained pear base for 30 minutes so the saffron can bloom.
  3. Divide the pear base between two ice-filled highball glasses. Slowly top each glass with sparkling water and stir once from the bottom.

Serve it beautifully

The glass, temperature and first aroma all shape the drink. Set those details before the final pour.

  1. Use two chilled highball glasses and large clear ice so the drink stays cold without becoming watery too quickly.
  2. Cut a slim slit in each pear fan and rest it on the rim. Clap the rosemary lightly between your palms, then place it beside the pear so its aroma reaches the drinker first.
  3. Serve immediately while the bubbles are lively.
