What you’ll need
- 4 fresh or thawed frozen pandan leaves, washed, plus 2 small knotted pieces for garnish
- 1/3 cup certified vegan granulated sugar
- 1/3 cup water
- 1/2 cup fresh pomelo juice, finely strained
- 1/4 cup fresh pomelo sacs, membranes removed
- 2 tablespoons chilled pandan syrup
- 1 tablespoon fresh lime juice
- 1/8 teaspoon fine sea salt
- 1 cup chilled plain soda water
- 2 cups pebble ice
- 2 wide strips pomelo peel, for garnish
02
Mix the drink
- Cut the four pandan leaves into 5 cm pieces and gently bruise them with the back of a spoon.
- Combine the pandan, sugar and water in a small saucepan. Bring to a gentle simmer over medium heat and cook for 3 minutes, stirring until the sugar dissolves.
- Remove the pan from the heat, cover and steep for 20 minutes. Strain the syrup, press lightly on the leaves, then chill for at least 30 minutes. The batch makes more than needed for two drinks.
- Juice the pomelo and pass the juice through a fine sieve. Remove all bitter membrane from the reserved pomelo sacs.
- In a small chilled pitcher, stir together the pomelo juice, pomelo sacs, 2 tablespoons pandan syrup, lime juice and sea salt until cold and evenly combined.
- Half-fill two glasses with pebble ice. Divide the pomelo mixture between them, top each with 1/2 cup soda water and churn gently with a bar spoon for 5 seconds. Crown with the remaining pebble ice.

Serve it beautifully
The glass, temperature and first aroma all shape the drink. Set those details before the final pour.
- Use two well-chilled, tall footed pilsner glasses so the pale citrus colour and floating pomelo sacs remain visible.
- Fill each glass with fresh pebble ice, keeping the ice loose enough for the drink to move as it is churned.
- Garnish each glass with one wide pomelo-peel ribbon and one small knotted pandan leaf, positioned above the rim and away from the drinking edge.
- Serve immediately while the soda is lively, the glass is frosted and the pandan aroma is freshest.
