Stirred white-cranberry aperitif

White cranberry, juniper and lemon make a clear, quietly aromatic aperitif that is stirred cold and served up without bubbles.

What you’ll need
- 2 teaspoons food-grade dried juniper berries, lightly crushed
- 2 strips lemon peel, each 5 centimetres long, with minimal white pith
- 180 millilitres boiling water
- 360 millilitres chilled non-alcoholic white cranberry juice
- 60 millilitres fresh lemon juice, finely strained
- 45 millilitres pure maple syrup
- 1/8 teaspoon fine sea salt
- 12 large ice cubes, for stirring
- 4 lemon-peel coins, for garnish
- 4 small fresh thyme tips, for garnish

Mix the drink
- Place the crushed juniper berries and two lemon-peel strips in a heatproof jug. Pour over the boiling water, cover and steep for 12 minutes.
- Strain the infusion through a fine-mesh sieve, pressing lightly on the aromatics, then discard the solids. Let the infusion cool for 10 minutes.
- Whisk the white cranberry juice, lemon juice, maple syrup and salt into the juniper infusion until the syrup and salt are fully dissolved.
- Cover and refrigerate the mixture for at least 30 minutes, or up to 8 hours, until thoroughly cold.
- To serve all four drinks at once, fill a large mixing jug with the 12 ice cubes. Add the chilled mixture and stir smoothly for 25 seconds.
- Strain immediately and evenly into four prepared glasses, leaving the stirring ice behind.

Serve it beautifully
The glass, temperature and first aroma all shape the drink. Set those details before the final pour.
- Chill four 150- to 180-millilitre Nick and Nora or small coupe glasses for at least 15 minutes before serving.
- Serve the drink up, with no ice in the glass, after stirring it with large cold ice cubes to dilute and chill it gently.
- Express one lemon-peel coin over each glass, clip it to the rim and tuck a small thyme tip behind it; do not muddle the thyme.
- The drink should be crystal cold when poured. Garnish and serve within 2 minutes so the citrus aroma is brightest and the drink remains well chilled.
