01

What you’ll need

  • 1 cup ready-to-drink cold brew coffee, chilled
  • 1/2 cup cold filtered water
  • 3 tablespoons pure date syrup
  • 2 tablespoons fresh orange juice, finely strained
  • 1/4 teaspoon alcohol-free vanilla bean powder
  • 1/8 teaspoon ground cinnamon
  • 1 small pinch fine sea salt
  • 1 cup ice cubes, for stirring
  • 2 large clear ice cubes, for serving
  • 2 wide strips fresh orange peel, with minimal white pith

02

Mix the drink

  1. Whisk the cold filtered water and date syrup in a small jug until the syrup is fully dissolved.
  2. Add the chilled cold brew, strained orange juice, vanilla bean powder, cinnamon and sea salt. Whisk again until evenly combined.
  3. Refrigerate the mixture for 15 minutes so the flavours settle and the drink becomes thoroughly cold.
  4. Fill a mixing glass or sturdy jug with the 1 cup of ice cubes. Pour in the chilled coffee mixture and stir smoothly for 20 to 25 seconds.
  5. Taste a small spoonful. If the cold brew is especially intense, stir in 1 to 2 tablespoons additional cold water.
  6. Strain immediately into the prepared glasses according to the serving instructions.

Serve it beautifully

The glass, temperature and first aroma all shape the drink. Set those details before the final pour.

  1. Use two chilled double-rocks glasses, about 250 ml each.
  2. Place one large clear ice cube in each glass just before straining the drink.
  3. Divide the stirred mocktail evenly between the glasses, keeping the surface clear and still rather than foamy.
  4. Hold an orange peel over each glass, coloured side toward the drink, and twist firmly to express the citrus oils. Rub the peel around the rim, then rest it neatly on the edge.
  5. Serve at approximately 4 to 6°C immediately after garnishing, before the large cube has time to dilute the roasted and caramel notes.
