Fresh apple, fragrant jasmine tea and bright lemon shake into a pale-gold sour with gentle ginger warmth and a silky aquafaba cap.

What you’ll need

  • 1/2 cup boiling water
  • 1 jasmine green tea bag
  • 3/4 cup chilled freshly pressed unfiltered apple juice, made without animal-derived clarification agents
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon pure maple syrup
  • 1 teaspoon finely grated fresh ginger
  • 3 tablespoons aquafaba from unsalted or low-sodium chickpeas
  • 1 small pinch fine sea salt
  • 1 1/2 cups ice cubes, for shaking
  • 1/4 small Granny Smith apple, cored and very thinly sliced, for garnish

Mix the drink

  1. Pour the boiling water over the jasmine green tea bag and steep for 4 minutes. Remove the bag without squeezing, then chill the tea for 30 minutes.
  2. Add the chilled tea, apple juice, lemon juice, maple syrup, grated ginger, aquafaba and sea salt to a cocktail shaker without ice.
  3. Seal the shaker and shake vigorously for 20 seconds to build a fine foam.
  4. Add the ice, reseal and shake for another 15 seconds until the shaker is very cold.
  5. Double-strain through the shaker strainer and a fine sieve, dividing the drink evenly between the prepared glasses.

Serve it beautifully

The glass, temperature and first aroma all shape the drink. Set those details before the final pour.

  1. Chill two coupe glasses for at least 10 minutes before mixing.
  2. Serve the drink straight up with no ice in the glass so the foam remains smooth and the jasmine aroma stays focused.
  3. Let the poured drinks stand for 20 to 30 seconds so the foam cap settles, then fan three thin green-apple slices on each rim.
  4. Serve immediately while very cold. Prepare the apple garnish just before serving to limit browning.
