What you’ll need
- 2 1/2 cups freshly squeezed clementine juice, strained
- 1 1/2 cups water
- 3 tablespoons pure maple syrup
- 2 tablespoons fresh lemon juice
- 2 fresh rosemary sprigs, plus 4 short tips for garnish
- 1/2 teaspoon black peppercorns, lightly crushed
- 1/2 teaspoon pure vanilla extract
- 1 small pinch fine sea salt
- 4 wide strips clementine peel, with no white pith, for garnish
02
Mix the drink
- Combine the water, maple syrup, two rosemary sprigs, crushed peppercorns and salt in a medium saucepan.
- Bring just to a gentle simmer over medium heat. Lower the heat and simmer for 4 minutes, then remove from the heat and steep for 6 minutes.
- Strain the infusion through a fine-mesh sieve into a clean saucepan, discarding the rosemary and peppercorns.
- Add the clementine juice, lemon juice and vanilla. Warm over medium-low heat for 3 to 5 minutes, stirring occasionally, until steaming but not boiling.
- Taste and add up to 1 tablespoon more water if the citrus is especially tart. Keep warm over the lowest heat while preparing the cups.

Serve it beautifully
The glass, temperature and first aroma all shape the drink. Set those details before the final pour.
- Use four clear, heatproof glass cups with handles. Preheat them with hot water for 1 minute, then empty and dry them.
- Serve without ice. Divide the drink among the warmed cups while it is steaming, ideally at about 65 to 70°C (150 to 160°F).
- Express one clementine peel over each cup, curl it loosely and rest it against the inside rim with one short rosemary tip.
- Serve immediately after garnishing so the drink stays warm and the fresh citrus oils remain fragrant.
