Kiwi-Tarragon Pebble-Ice Swizzle

Ripe kiwi, fresh lime and cool tarragon churn through pebble ice into a vivid green swizzle with a lively sparkle and a clean herbal finish.

What you’ll need
- Tarragon syrup: 1/2 cup (125 mL) water
- Tarragon syrup: 1/3 cup (67 g) organic cane sugar
- Tarragon syrup: 4 fresh tarragon sprigs
- Mocktail: 2 medium ripe kiwis, peeled and chopped
- Mocktail: 3 tablespoons fresh lime juice
- Mocktail: 3 tablespoons chilled tarragon syrup
- Mocktail: 1/16 teaspoon fine sea salt
- Mocktail: 1 cup (250 mL) well-chilled sparkling mineral water
- Mocktail: 3 cups pebble or finely crushed ice, plus more as needed
- Garnish: 1/2 kiwi, cut into 4 thin half-moons
- Garnish: 2 small fresh tarragon sprigs

Mix the drink
- Make the tarragon syrup: combine the water and organic cane sugar in a small saucepan. Warm over medium heat, stirring, just until the sugar dissolves; do not let it caramelize.
- Remove the saucepan from the heat, add 4 tarragon sprigs, cover and steep for 10 minutes. Strain, cool, then refrigerate for at least 30 minutes. Reserve the remaining syrup for another drink and keep it refrigerated for up to 1 week.
- Place the chopped kiwi in a small bowl and mash it thoroughly with a fork. Press the pulp through a medium-mesh sieve to remove the coarsest fibres while keeping the fine black seeds and bright green body.
- Divide the kiwi purée, lime juice, chilled tarragon syrup and sea salt evenly between two chilled stemless wine goblets.
- Fill each glass halfway with pebble ice. Swizzle briskly with a bar spoon for 15 seconds, lifting the mixture through the ice until the outside of the glass begins to frost.
- Add more pebble ice to form a small mound, divide the sparkling mineral water between the glasses and give each drink one gentle bottom-to-top swizzle to combine without losing the bubbles.

Serve it beautifully
The glass, temperature and first aroma all shape the drink. Set those details before the final pour.
- Use two clear 14-ounce stemless wine goblets chilled for at least 10 minutes so the vivid green colour and fine kiwi seeds remain visible.
- Use dry pebble or finely crushed ice, packing it firmly enough to hold the garnish but leaving room for the sparkling mineral water.
- Tuck two kiwi half-moons and one fresh tarragon sprig upright into the ice on each glass; keep the garnish above the liquid for a clean aroma and presentation.
- Serve very cold immediately after the final gentle swizzle, while the ice is crisp and the sparkling water is still lively.
