What you’ll need

  • 600 g ripe white peaches, peeled, pitted and chopped
  • 240 ml water
  • 45 ml pure maple syrup
  • 8 green shiso leaves, lightly torn
  • 45 ml fresh lemon juice
  • 1/8 tsp fine sea salt
  • 240 ml plain soda water, thoroughly chilled
  • 4 small green shiso leaves, for garnish
  • 4 thin white peach wedges, for garnish

02

Mix the drink

  1. Combine the water and maple syrup in a small saucepan. Bring just to a simmer, remove from the heat and add the 8 torn shiso leaves.
  2. Cover and steep for 10 minutes. Strain, pressing the leaves gently, then cool the syrup to room temperature.
  3. Blend the chopped peaches, shiso syrup, lemon juice and salt until completely smooth. Pour into a shallow 20 cm square metal pan.
  4. Freeze for 45 minutes. Scrape the frozen edges toward the centre with a fork, then return the pan to the freezer.
  5. Continue freezing and scraping every 30 minutes for about 2 hours more, until the mixture is made of loose, feathery crystals.
  6. Give the granita one final scrape immediately before serving. Keep the soda water unopened and cold until the glasses are ready.

Serve it beautifully

The glass, temperature and first aroma all shape the drink. Set those details before the final pour.

  1. Chill four small stemmed goblets or balloon glasses for at least 15 minutes.
  2. Divide the granita among the glasses, using about 150 ml per serving.
  3. Do not add separate ice; the granita supplies the chill and dilution.
  4. Pour 60 ml chilled soda water slowly down the inside of each glass immediately before serving.
  5. Garnish with one small shiso leaf and one peach wedge. Serve very cold within 3 minutes, before the finest crystals melt.
